Grandma's Yeast Rolls Recipe

Ingredients: 2 cups warm water 2 packages quick acting yeast ½ cup sugar ½ cup shortening 1-2 eggs (1 large or 2 small) 6 ½ to 7 cups of flour 2 teaspoons salt

Directions:Mix water, yeast and sugar in bowel and let stand for approximately 20 minutes. It is important that the water be warm and not hot so that you do not kill the yeast. Add the eggs, shortening, 3 cups of flour and salt then mix ingredients together. Mix in additional flour until you can turn a ball of dough out onto a floured board. At this point you will need to knead in enough flour so that dough is no longer sticky to touch.
Place dough in a large bowel and allow it to rise until it has doubled in size. Remember to put a small amount of vegetable oil in the bottom of the bowel and to rotate the ball of dough to ensure that it has been coated with oil. This will prevent the dough from turning hard where the air is touching it.
Once the dough has doubled in size punch it down and allow it to double in size again. Punch the dough down one more time and begin to pinch off pieces of dough into small balls that can be shaped into rolls. The rolls should be placed in a greased baking dish or cake pan and brushed with melted butter. Set the rolls aside to rise again until they have doubled in size.
Bake the rolls in a pre-heated oven at 350 degrees until golden brown.
