About 6-8 medium-sized red potatoes, peeled and cut
1/4 c. butter, softened
2-4 tbsp. salt (to taste)
1/2-2/3 c. half & half (may use part half & half, part heavy whipping cream)
2 cloves garlic, crushed, fried in olive oil until nicely clear and slightly browned

Directions:
Boil potatoes on high for 15 minutes as soon as water is at a full boil. Drain potatoes and add butter and salt; beat with mixer on high. Add half & half / cream as you go until smooth and very creamy. Add garlic. Mix well, serve & garnish sparingly with very finely chopped fresh parsley.
