1 pkg potato gnocchi
2 Tbsp oil
1 large onion, chopped
2 cloves garlic, chopped
1-14 oz can chopped tomatoes, not drained
½ vegetable stock cube dissolved in 1/3 C. boiling water
Salt & pepper
2 Tbsp basil, shredded
1 Tbsp oregano, shredded
Parmesan cheese

Directions:
Directions:
Heat the oil in a pan. Add the onions and garlic and cook for 3-4 minutes. Add the tomatoes and stock and cook, uncovered, for 10 minutes. Season with salt and pepper to taste.

Bring a large pan of water to boil and cook the gnocchi until they rise to the top. Drain and keep warm.

Stir the basil & oregano into the tomato sauce and cook for 2-3 more minutes. Pour over the gnocchi.
