1 c. butter, softened
1/2 c. granulated sugar
2 egg yolks
1 Tbsp. vanilla extract
2 1/4 c. all-purpose flour
3 Tbsp. poppy seed
1/2 c. your favorite jam
Powdered sugar

Directions:
1. Using electric mixer, beat butter and sugar until light; beat in egg yolks and vanilla. In a medium bowl, combine flour and poppy seeds; gradually add to butter mixture, mixing until just blended.

2. Shape dough into 1-inch balls. Place 1 inch apart on lightly greased baking sheets. Make a deep indentation in center of each ball. Bake at 350ºF for 15 to 18 minutes or until edges just begin to brown. Transfer from baking sheets to wire racks; cool completely.

3. Spoon jam into centers of cookies; dust with powdered sugar.

To make Lenten: Replace egg yolks with 2 Tbsp. soy milk and replace 1 c. butter with 1 c. margarine.
