¾ C butter
1 egg
1 C sugar
½ tsp vanilla
½ tsp lemon juice
Pinch of salt
1 T orange zest
1 C grated carrots
2 C flour
2 tsp baking powder

Orange Icing (for Orange Carrot Cookies)

2 C powdered sugar
1 T butter, softened
1 tsp orange zest
½ tsp lemon juice
Orange juice (enough to make icing spreadable)
Few drops of red/yellow food coloring (optional)

Combine ingredients. Icing should be spreadable but not too thin. Ice cooled orange carrot cookies.

Preheat oven to 350F.

Cream together butter, sugar, and egg. Add in remaining ingredients and mix until well blended.

Bake cookies for 10-12 minutes. Cool and frost with orange icing
