Baby back or Pork Spare Ribs, cut in bite size pieces ask butcher to cut into thirds, then slice ribs, or whole rib slices
2 cans sweet peas, drain one of juice
2 cans of stewed tomatoes
Low Sodium Soy Sauce or *Bragg’s Liquid Amino Acids
Extra Virgin Olive Oil, sparingly cover the bottom of pan
3 fresh garlic cloves, minced or pressed
1 red onion if you like, slices or chunks

Pre-heat large pan on medium heat until warm, add oil and ribs to begin browning process. Add onions and soy sauce* generously, brown until all ribs are even. Once all ribs are evenly browned and lightly cooked, drain oil from pan into sink, hot water running. Return pan to stove on medium heat, add stewed tomatoes, garlic and *soy sauce to ribs, add cup plus of water, enough to slightly cover ribs, reduce heat to simmer at least 45 minutes. Once ribs are tender, add sweet peas are warmed.

Serve over rice!

Note: ribs prepared in bite pieces equal bite-size bones to discard.
