1 Egg, separated
8 oz Pecan halves
1/2 C packed Brown Sugar
1/2 tsp Cinnamon

1. Preheat oven to 350º. Line cookie sheet with edges with parchment paper.
2. Separate egg; reserve egg yolk for another use. Whip egg white until frothy in a large bowl.
3. Add pecans to bowl. Toss to coat evenly.
4. Sprinkle brown sugar and spice and toss to coat evenly.
5. Spread pecans out onto parchment into a single layer.
6. Bake 18 - 20 minutes until nuts begin to brown. Slide parchment with pecans onto cooling rack. Cool completely.
