Meatballs: 1 egg
1/3 c. finely chopped onion
1/4 c. dry breadcrumbs
2 cloves garlic, minced
1 tsp. oregano
1 tbsp. grated Parmesan
1/2 tsp. salt
1/4 tsp. ground pepper
1 lb. ground turkey
2 tbsp. oil
Sauce: 1 onion, chopped
2 tbsp. oil
1/2 tsp. pepper
2 cloves garlic, crushed
3 c. sliced, fresh mushrooms
1 red or green pepper, chopped
1 1/2 tsp. each basil & sugar
1 tsp. each oregano & salt
1 large can tomatoes, chopped
1 tbsp. tomato paste
3 1/2 c. rigatoni pasta
1 1/3 c. grated mozzarella cheese
1/4 c. grated Parmesan cheese

Meatballs: In a bowl beat egg lightly; mix in onion, breadcrumbs, garlic, Parmesan, oregano, salt and pepper. Mix in ground turkey. Shape into balls. In a large skillet heat oil; cook meatballs until brown; drain.
Sauce: Add oil, onion, garlic mushrooms, peppers, basil, sugar, oregano,salt & pepper & 2 tbsp. water to skillet; cook over medium heat. Cook 10 mins. Stir in tomatoes and paste; bring to a boil. Add meatballs and simmer 30 mins.
Prepare rigatoni according to package directions. Drain. Add tomato sauce and place in large baking dish. Sprinkle grated Parmesan and mozzarella on top and bake at 400ºF for 20 mins.
