Fresh Spinach, 2 T. butter and flour

Directions:
Directions:
Cook the fresh spinach with water (enough to cover bottom of pan). After 10-15min. drain, but keep all of the water. In a separate sauce pan, add the butter and flour to thicken and add the spinach juice. You are making a roux. Add the chopped spinach. Cook on medium low and make sure the mixture does not get lumpy.

I used to love when Gramie used to make this dish with her bread-crumb crusted hamburgers. It always felt like comfort food to me.
