2 1/4 c. milk (part vegetable or potato water works well, too)
1/4 c. oil
1/4 c. sugar
1 egg
1/4 c. wheat germ (optional)
1/4 c. oat bran (optional)
1/2 c. wheat bran (optional)
2 c. flour
2 T. quick rise yeast (2 pkgs.)
2 tsp. salt
additional 3-3 1/2 c. flour
Note: When I double the recipe, I only use 3 T. yeast (3 pkg.) and 3/4-1 T. salt

Directions:
Heat first 2 ingredients in saucepan to about 50º C (120º-125º F). add to rest of ingredients (except additional flour) in large mixing bowl. Beat on low speed until moistened. Scrape bowl and mix on med. speed about 3 min. By hand, stir in additional flour to form a soft dough. On well-floured surface, knead dough until smooth and elastic, about 1 min. Place dough in greased bowl, turn greased side up. Cover and let rise in a warm place until light and doubled in size - approx. 45-60 min. Grease two loaf pans. Punch down dough, divide in half, knead briefly on lightly floured surface and shape into 2 loaves. Place in prepared pans. (OR Grease two cookie sheets and make buns) Cover, let rise in warm place 30-45 min. Bake in pre-heated oven at 350º F approx. 35-40 min. until golden brown and loaves sound hollow when lightly tapped. Immediately remove from pans. (Note: when making buns - bake for approx. 15-20 min.)

I've been making this recipe for over 20 years for most of my family's bread. I usually double the recipe at least once a week and make 3 loaves bread and 1 pan buns. Very easy!!!
