1 loaf day old French bread, cut into 3/4 in. cubes
1 c. walnuts
2 c. celery, chopped
2 c. onion, chopped
6 T. butter
1 green apple, peeled and chopped
3/4 c. raisins
5-10 chopped green olives
1-2 c. stock from turkey giblets
1/4 c. fresh parsley
1 tsp. poultry seasoning
salt and pepper

Simmer turkey giblets with water and salt for 1 hr., uncovered. Toast walnuts in microwave, 1-2 mins. Chop and set aside. Saute' on medium 3 T. butter and bread cubes. Stir to coat and cook until toasted. Set aside. Saute onions and celery on medium high with 3 T. butter for 5-10 mins. Add bread cubes, walnuts, apple, raisins, olives and parsley. Add 1 c. stock and seasonings. Cover. Turn heat to low and cook for 1 hr. Check and stir every 10 mins., adding more stock if needed.
