COMBINE IN LARGE SOUP POT:
8 c. water (10 for large groups)
1/4 of a chicken (1/2 for large groups)
2 pieces of celery and leaves (3 for large groups)
1/4 onion (or more)
1 to 2 tbsp. chicken base (2 for large groups)
3 whole allspice (4 for large groups)
salt & pepper to taste

COVER & SIMMER FOR 1 TO 1 AND 1/2 HOURS.

REFRIGERATE.

SKIM OFF SOME FAT IF DESIRED. STRAIN THE LIQUID AND TAKE THE MEAT OFF THE BONES.

HEAT THE STOCK AND ADD THE MEAT ALONG WITH ANY VEGGIES, NOODLES, ETC.
