Bok choy (the smaller size stalks)
Sweet and sour sauce
Peanut butter

Boil the bok choy until tender. Place on a platter. Into 1/4 c. of peanut butter stir in the sweet and sour sauce a little at a time until the mixture is the consistency of a heavy gravy. (Change the amount of the ingredients to make enough sauce for the amount of bok choy being served.)

Pour over the bok choy on a serving dish.

The bok choy can be stir fried as an alternative. Sliced carrots and/or sliced sweet potatoes can be added in the stir fry. Then place on a serving platter with the peanut sauce or serve over rice or noodles with the sauce.
