1-1/2 cups old-fashioned rolled oats
1 cup all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup sugar
1/3 cup canola, corn, safflower or sunflower oil
cholesterol-free, fat-free egg substitute,
equivalent to 2 eggs
3 tbsp. buttermilk or plain nonfat yogurt
1 cup mashed ripe bananas (about 2)
1/2 cup fresh or frozen blueberries

Preheat oven to 350º. Grease 9x5" loaf pan. Cut 18x5" strip of waxed paper or foil; place in prepared pan, covering short sides and bottom; set aside.

In food processor or blender, process oats until consistency of flour. In large bowl, mix processed oats, flour, baking powder, baking soda and salt.

In separate bowl, blend sugar, oil, egg substitute, buttermilk or yogurt, and bananas. Add to flour mixture, stirring until well blended. Stir in blueberries. Spoon into prepared pan.

Bake at 350º for 50-60 minutes or until pick inserted in center comes out clean. Remove from pan to wire rack; cool completely.
