3 cups rhubarb, chopped
1 reduced-fat graham cracker pie crust, 8"
1 pkg. (3 oz.) sugar-free strawberry gelatin
1-1/2 cups cold skim milk
1 pkg. (1.3 oz.) instant sugar-free vanilla pudding

Directions:
Directions:
Place rhubarb in microwave-save bowl, cover and cook on High 6-8 minutes, until rhubarb is soft. Stir every 2 minutes. Stir in gelatin until well dissolved. Cool completely.

In mixing bowl, combine milk and pudding mix. Beat on Low speed for 2 minutes. Fold in rhubarb mixture. Spoon into crust. Cover and refrigerate until firm.
