2 cups whole wheat flour
1/2 cup brown sugar
1 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup margarine
1/2 cup orange juice
2 eggs, beaten
2 cups grated carrots
3/4 cup raisins

Directions:
Directions:
In mixing bowl, combine flour, brown sugar, baking powder, baking soda and salt.

In a small bowl, beat margarine, orange juice, eggs for 1 minute. Stir in dry ingredients until blended. Fold in carrots and raisins.

Fill sprayed or paper-lined muffin cups 3/4 full. Bake at 350º for 20-25 minutes. Test with tooth pick.
