6 eggs
1 tsp flour
1/4 tsp salt
1/8 tsp pepper
1/2 to 1 cup diced ham
1/2 to 1 cup shredded cheddar cheese

*Variation: Add a pinch of cumin and some green chilies or dry mustard.along with salt and pepper.

Heat broiler to 500 degrees.

Separate eggs.
Mix flour, salt and pepper with egg yolks.
Beat egg whites until frothy

Fold in egg yolk mixture, ham and cheese.

Cook over medium high heat (in oven proof
pan) tilting pan periodically and lifting edge
to let liquid seep into bottom of pan. When
bottom is lightly cooked and slightly
firm

Place under broiler (middle rack) until firm
and golden (approximately 2-2 1/2 minutes).
The omelet should puff nicely.
Do not overcook or it will be dry.

Very pretty if served immediately. Cut and serve at the table.
