12 walnut halves
1 lb soft cream cheese or ricotta
5 oz Roquefort, Blue or Gorgonzola
1 bunch chives, finely chopped
1 Tablespoon cognac or Armagnac (optional)

Directions:
Directions:
Let cheeses soften. Grate or chop walnuts finely.
Combine cheeses & cognac with fork. Add salt & pepper. When smooth, add walnuts & chives. Mix well; Serve with toasted whole grain bread, crackers, breadsticks or fresh vegetables
