Preheat waffle iron to manufacturer’s directions.

MIX IN A LARGE BOWL:
2 c. all-purpose flour
1/4 c. granulated sugar
1 tbsp. cornstarch
2 tsp. baking powder
2 tsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. ground ginger
1/4 tsp. ground nutmeg

SEPARATE 2 LARGE EGGS. KEEP BOTH YOLKS AND WHITES. SET ASIDE THE WHITES FOR NOW.

COMBINE IN A MEDIUM BOWL & MIX WELL:
egg yolks
1 and 3/4 c. milk
1/2 c. LIBBY’SÒ 100% Pure Pumpkin

ADD THE ABOVE MIXTURE TO THE FLOUR MIXTURE.

STIR IN:
2 tbsp. butter or margarine, melted

BEAT EGG WHITES IN SMALL MIXER BOWL UNTIL SOFT PEAKS FORM. GENTLY FOLD INTO PUMPKIN MIXTURE.

CHOP 3/4 C. OF NUTS.

DEPENDING ON SIZE OF WAFFLE IRON, POUR 1/2 CUP TO 1 AND 1/2 CUPS BATTER ONTO HOT IRON. GENEROUSLY SPRINKLE WITH NUTS.

BAKE 4 TO 5 MIN. OR UNTIL STEAMING STOPS. REPEAT WITH REMAINING BATTER AND NUTS. SERVE WITH PUMPKIN MAPLE SAUCE.



Pumpkin Maple Sauce

HEAT IN SMALL SAUCEPAN UNTIL WARM:
1 c. maple syrup
3/4 c. LIBBY’SÒ 100% Pure Pumpkin
1/4 tsp. ground cinnamon
