4 T Espresso coffee
1 T Brandy
1 T cognac
4 lady fingers
1 cup mascarpone
1/2 cup sugar, divided
2 eggs, separated
pinch of salt and pepper
1 oz. bittersweet chocolate, shredded

Directions:
Directions:
In a bowl, beat the egg whites, pinch of salt, and half of sugar until stiff. Set a side.

In another bowl, beat the egg yolks and remaining sugar until pale in color. Add the mascarpone and egg white mixture.

In a shallow bowl, combine the coffee, brandy and cognac. Place lady fingers to soak for about 10 seconds. Remove immediately. Let dry for 5 seconds.

In a martini glass, put the egg/mascarpone mixture, then a lady finger, then shredded chocolate. Add more egg mixture on top.

Chill at least 4 hours. Sprinkle with more chocolate to garnish. Serve.
