1 1/2 pound beef tenderloin, trimmed
2 eggs beaten
1/2 crushed almonds
Salt and freshly ground pepper to taste

Directions:
Directions:
Preheat oven to 425 degrees. Coat the beef on all sides with beaten eggs, then roll the meat in the almonds until coated evenly. Sprinkle all over with salt and pepper. Transfer beef to roasting pan and bake in pre-heated oven for about 30 minutes or until instant read thermometer inserted into the thickest part of the meat registers 122 degrees.
Remove from oven and let the beef rest for 10 minutes. Slice into very thin medallions and fan out in slices on each of 4 warmed plates. Add a mound of garlic mashed potatoes and serve immediately. (See index for recipe)
