1 pkg chopped frozen spinach or 1/2 pound fresh spinach, chopped
1 medium onion
1 clove garlic, finely minced
1 pound sliced mushrooms
2 T olive oil
1 pound lean ground beef
Salt and freshly ground pepper to taste
4 eggs, lightly beaten

Directions:
Directions:
Thaw frozen spinach and drain well, or cook fresh spinach and drain well. Set aside. In a heavy skillet,saute onion and garlic in oil until onion is transparent. Add beef and brown thoroughly. Sprinkle with salt and pepper and stir in reserved spinach. Keeping heat high, add eggs to the skillet, stirring constantly until eggs are blended and cooked. Adjust seasonings and serve immediately.
