2 tbsp. soy sauce
2 tbsp. dry sherry
1 tsp. ground ginger
1 clove garlic (crushed)
2 large whole chicken breasts
¼ corn oil, margarine, or oil
2 c. sliced fresh mushroom
1 c. thinly sliced celery
½ c. chopped scallions or onion
7 oz. package frozen snow peas
8 oz. can water chestnuts
¾ c. chicken broth
2 tbsp. water
1 tbsp. cornstarch

Blend soy sauce, sherry, ginger, and garlic. Bone and skin chicken and cut into bite-size pieces. Marinate in soy sauce mixture for 30 minutes or overnight. Drain. Heat margarine or oil in skillet over medium-high heat. Add chicken, mushrooms celery, and scallions. Sauté 10 – 15 minutes stirring constantly until chicken is done. Stir in drained, sliced water chestnuts, thawed snow peas, and chicken broth. Combine cornstarch with water. Stir into skillet. Cook until thickened. Serve with rice.
