2 sm frying chickens, cut into serving pieces

1 c. Olive Oil
1/2# Chorizo
2 c Rice
1 lg Onion-chopped
8 cloves of Garlic
1 can Italian Tomatoes-15 oz
4 c Chicken Stock
1# Shrimp, peeled and deviened
1/2 tsp Saffron, soaked in 2 T stock
1/2 minced Parsley
1 pkg Frozen Peas

Simmer chicken in 4 cups of water, drain. Heat 1/2 c oil in widest casserole, add chicken and sausage, saute 10 minutes. Add rice and stir. In another pan, add 1/2 c. oil, onions, garlic and tomatoes, then 4 cups of stock. Boil 5 minutes.Combine both pans, add more liquid if needed, cook 1/2 hour. As soon as rice is done add seafood and saffron. When shrimp is pink, add remaining ingredients and remove from heat and serve.
