1/3 c Raisins
1/2 c Scotch Whiskey
2 Pork Tenderloin Roasts
2 T Butter
1/2 c Chicken Stock
3 T Dijon Mustard
3 T Brown Sugar
1 tsp Thyme
Salt and Pepper

Directions:
Directions:
Combine and soak raisins and scotch.
Cut roasts into 3/4 inch filets, heat butter and saute filets 1 minute on each side. Lower heat and continue to cook for 3 minutes. Remove pork from the pan, pour off fat. Drain the raisins, add Scotch to the skillet, add stock, mustard, sugar, thyme,and salt and pepper to you own taste.
Increase heat under skillet slightly, stirring constantly, simmer until sauce thickens. Add Filets and raisins. Serve on a platter.
