12 c. butter
1/2 c. smooth peanut butter
1/2 c. brown sugar
1/2 c. white sugar
1 egg
1/2 tsp. vanilla
1 1/4 c. white flour
1 tsp. baking soda
1 1/2 c. chocolate chips
Directions:
Directions:
Preheat oven to 325ºF.
Beat butter, peanut butter and both sugars until light and fluffy.
Add egg and vanilla, mixing well
Combine flour and baking soda. Add to butter mixture, mixing well.
Roll into 1" balls.(I use melon baller)
Place in mini muffin tin.
Bake for 12 to 14 min.
Remove from oven and immediately push center down with handle end of wooden spoon and then place 1 tsp. chocolate chips in centre of each cupcake.
Allow to cool well before removing from muffin pan
