6 eggs
2 cups salad oil
4 tsp. vanilla

4 c. flour
2 1/2 c. sugar
4 tsp. baking soda
4 tsp. cinnamon
1 tsp. salt
4 c. grated carrots
1 c. each raisins, coconut, chopped nuts (any kind)
2 apples, grated but not peeled
1 can drained crushed pineapple
grated orange rind of one or two oranges

Directions:

Preheat oven to 350ºF. Line muffin tins with paper liners.
Mix first 3 ingredients in a large bowl.
Stir in remaining ingredients. Mix till JUST blended then fill muffin cups 2/3 full. Bake for 35 minutes.

This recipe is from my sister in Saskatoon. We use some of the pineapple juice in the recipe to make it a little moister.
