4 med. skinless, boneless, chicken breast halves
1/4 t. salt
1/4 t. coarsely ground black pepper
3 T olive oil
1 small onion, finely chopped
4 med. plum tomatoes, cut into 1/4" pieces
1/4 c. Kalamata olives, pitted and chopped (or black olives)
1 T lemon juice
1/2 c. crumbled feta cheese
2 T fresh parsley

Directions:

Season chicken with salt and 1/8 t pepper. In nonstick skillet heat 1 T olive oil. Add chicken and cook for 6 minutes. Reduce heat to medium, turn chicken and cook 6-8 minutes longer until juices run clear. Transfer chicken to platter. Cover and keep warm.
In same skillet, heat remaining 2 T olive oil over med. low heat. Add onion and cook, stirring about 5 min. until tender and golden. Add tomatoes and olives, lemon juice, 1/4 c. water and 1/8 t. pepper. Cook stirring 1 min. until tomatoes release their juice. Stir in feta cheese and parsley. Pour tomato mixture over chicken and serve. Serves 4. with bread and salad.

Sometimes I use canned diced tomatoes and don't cut the olives very small. I have also added zucchini.
