1 box lasagna noodles
Ricotta cheese
1-2 eggs
2 c. of Parmesan cheese (the real stuff in the dairy section)
4 c. mozzarella cheese
1 onion
1 green pepper
Sliced mushrooms
1 stick of butter
2 cloves of garlic
1 lb. lean ground beef
1/2 pkg. Italian sausage (or ground beef)
2 jars of your favorite spaghetti sauce

Boil noodles, then drain and rinse with cold water. Brown meats together then combine it bowl with 1 jar of spaghetti sauce (maybe a jar and a half) Sauté the vegetables in 1 stick of butter (sometimes I'll do 1-1/2 sticks if I have lots of mushrooms). In another bowl, mix 1 large container of ricotta cheese with 3 c. mozzarella cheese and 1 c. Parmesan cheese; add eggs. If ricotta is really solid, use 2 eggs. Add parsley, salt and pepper to taste. Take a 13 X 9 pan and put a coat of plain spaghetti sauce in the bottom. Start layering: noodles, cheese mixture, meat sauce, vegetables.
The top layer should be noodle, then add a layer of plain sauce, sprinkled with a mixture of Parmesan and mozzarella cheese. I usually get 2 layers if I use the deeper pan. Bake at 375º for about 45 minutes to an hour, or until bubbly. Let it set out for about 15 minutes before slicing.
