"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
3/4 bag Pepperidge Farms cornbread stuffing bread crumbs
1/4 bag Pepperidge Farms cubed sage bread crumbs
3-4 cans chicken broth
Package of cut up chicken (I mainly use legs and thighs)
4 sticks celery
1 large onion
2 eggs
Dash of milk
Pinch of fresh hand crushed Sage

Directions:
Directions:
Thoroughly cook chicken in broth. Remove chicken. Add onion and celery to hot broth and let boil for 10 minutes. Cut up chicken (removing skin) in bite sized pieces and add to stock mixture. Cook for an additional 5 minutes or more. In a large bowl, add bread crumbs. Slowly stir in onion, celery, meat and chicken broth. Make sure consistency is not too dry or too runny. Add eggs and a dash of milk. Crumble in fresh, whole sage. (I have a hard time finding this so sometimes I use a dash of other poultry seasoning.) If mixture gets too runny, add more breadcrumbs.

Personal Notes:
Gaga made her stuffing with a combination of real bread and cornbread which was always perfect!!
