5 cups water
1 cup flour
3/4 cups corn oil + 2 Tbs corn oil
3 pounds peeled and deveined shrimp
2 pounds lump crab meat
2 bunches green onions (sliced)
1 ½ to 2 pounds okra
1 Bell Pepper (diced)
3 stalks celery (sliced)
1 garlic pod (pressed)
1/4 cup chopped, fresh celery
Salt, Pepper, Seasoning Salt

Directions:

* In cast-iron skillet combine 3/4 cup oil and flour. Stir over medium/med-low heat until mix is chocolate brown (Roux)

* In a large skillet, stir okra and 2 tbs corn oil over med/low heat until no longer gooey.

*After Roux is browned, add cooked okra, green onion, celery, bell pepper, parsley, garlic, and seasonings to skillet and stir over med/low heat until vegetables are soft. Transfer to a large soup/gumbo pot. Add 1 cup water to skillet over med/low heat and stir to gather any remaining roux. Transfer to gumbo pot. Stir and add remaining 4 cups of water. Bring to a slow boil. Add shrimp, crab, and more seasonings. Cook over low heat for a few hours.

* Serve over rice.
