2 c. cooked potatoes (mashed)
1 lb. skinless and boneless codfish
1 c. diced yellow onion
1 tsp. dried thyme
1 tsp. white pepper
1-2 tsp. salt
1 egg (beaten)
˝ c. cream
2 tbsp. butter
4 slices beefsteak tomatoes
4 slices muenster cheese
Directions:
Directions:
Place fish in steamer and top with onion and seasonings. Cover and steam for 10 to 15 minutes until the onion is cooked. Combine the fish and seasoned onions with the potatoes. Mix in the egg and cream and shape into 4 patties. Sauté fishcakes in butter until browned. Top each with a slice of tomato and cheese and broil to melt the cheese slightly before serving.
