1 c. packed brown sugar
1 1/2 c. water
2 tbsp. margarine or butter
1 tsp. ground cinnamon
1 tsp. grated orange peel
5 c. 1/2 in. cubes toasted French bread
1/2 c. chopped blanched almonds or walnuts
1/2 c. raisins
1 tart apple, chopped
1 c. shredded or diced Monterey Jack or cheddar cheese (4 oz.)

Directions:
Heat brown sugar, water, margarine, cinnamon, and orange peel to boiling; reduce heat. Simmer uncovered 5 minutes.

Layer half the bread cubes, almonds, raisins, apple, and cheese in an ungreased 1 1/2 qt. casserole dish; repeat. Pour hot syrup over top. Bake uncovered in 350º oven until syrup is absorbed, 30 to 40 minutes.

Cinnamon and orange peel add fragrance to this unusual and inexpensive Mexican pudding. Shredded cheese is the surprise ingredient and bright flecks of apple peel add color.
