7.5 oz. jar roasted red peppers, drained
1/2 to 3/4 cup calamata olives
1 bag fresh spinach
1 cup (packed) fresh basil
6 large cloves garlic (up to 9)
Juice of 1 fresh lime
1/4 cup olive oil
Camembert cheese
Melba toast

Directions:
Process everything except cheese and crackers in a food processor until smooth. Heat cheese until warm in microwav, then cover with pesto mix. Warm again. Serve extra pesto on the side as a dip. Spread on melba toast.
