Cake:
1 c. Molasses
1 c. butter
4 med. eggs
1/2 c. orange juice
1 c. all-purpose flour
1 c. whole wheat flour
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
2 c. shredded carrots
1/2 c. chopped walnuts

Frosting:
1 pkg. cream cheese, 3 oz. (softened)
2 Tbsp. butter
1 1/2 c. powdered sugar
1 tsp. grated orange peel

Directions:
Directions:
In a large bowl, combine molasses, butter, eggs, and orange juice. Mix well. Stir in flour, baking soda, cinnamon, and salt. Mix well. Stir in carrots and walnuts. Pour mixture into 2 greased 8-9 inch round pans and bake at 350º for 30-35 minutes.

Frosting:
Combine frosting ingredients until well mixed. Spread on carrot cake.
