Oatmeal Cookies aka "Hallie's Corn" Recipe

Ingredients: 1-1/2 c. brown sugar 1-1/2 c. white sugar 1-1/2 c. shortening (I use Crisco) 3 eggs 3 t. vanilla 3 T. milk 3 c. flour 1-1/2 t. baking soda 1-1/2 t. baking powder 1-1/2 t. salt (I only use 1/2 t.) 3 c. Quick Cook Oatmeal

Directions:Preheat oven to 350º. Cream shortening, sugar and eggs together until light and fluffy. Stir in milk. Sift together dry ingredients. Stir dry ingredients into creamed mixture. Stir in the oatmeal, 1 c. at a time. The batter will be stiff. Drop by teaspoons (about 1 1/2 inches apart) onto a lightly greased cookie sheet. (Sometimes I also use Pizza pans). Bake 8-10 minutes. I begin baking on bottom rack of oven, then move to top rack to complete baking. I have to really keep an eye on the cookies or they will burn. Remove from pan and place cookies on a rack to cool. Put them on paper plates and stack the plates up until they are totally cool. This recipe makes 8 dozen cookies. Of course you can make 1/ 2 recipe if you want less cookies. |

Notes: When I knew the grandkids would be coming. I would bake these cookies. The kids would root around and look for cookies. They got to where they would look in the freezer in the basement, so I began labeling the packages "Hallie's Corn" thinking that surely they would not bother Hallie's frozen items. That worked for a little while, but they got smart and found them. SO thereafter we call our cookies "Hallie's Corn." You can make these up ahead of time and they will be good frozen for several months.
