3/4 c. shortening -(I use oil)
1 c. sugar
2 eggs
1 c. molasses
4 c. flour
1 t. salt
1 t. baking soda
2 t. cinnamon
1 t. ginger
3/4 c. (more or less) cold strong coffee
Directions:
Directions:
Preheat oven to 350º. Stir shortening, sugar, eggs and molasses into a bowl; mix well. Mix dry ingredients together and add to the above. Add enough coffee to make a thick dough. Spoon on to greased cookie sheet. Bake 8-10 minutes. Check often while baking until they are done, and be careful they do not burn!
