4 Tbsp Butter
1 medium onion diced (or scallions)
1 14 oz can stewed tomatoes
1/2 pint heavy cream
1 clove garlic, chopped
3 basil leaves, chopped
1 lb peeled and deveined shrimp (can use chicken if you prefer)
3-6 sun dried tomatoes
1/2 cup vodka
1 lb Penne Pasta

Directions:

In medium saucepan saute sun dried tomatoes, onion, garlic and basil in butter until soft (8-10 minutes)
Add vodka, bring to boil, stir frequently. Lower heat and simmer for 8 minutes until sauce evaporates and vodka aroma subsides
Add stewed tomatoes and heavy cream, cook 5 minutes
Add shrimp (or sautéed chicken), cover pan and cook 5-8 minutes until shrimp are cooked.
Mix with 1 lb cooked penne pasta. Toss well and garnish with basil.
