potatoes
hard boiled eggs
onions, diced
celery, diced


Dressing:
1 heaping T. Miracle Whip (not light)
1 T. sugar
1 T. apple cider vinegar
prepared mustard, to taste
salt and pepper, to taste

Directions:
Directions:
1. Wash and boil potatoes.
2. When potato can be poked with a fork remove from burner and drain. Do not over boil.
3. Cool slightly; peel and slice potatoes.
4. Add hard boiled eggs, onions, celery.
5. Mix dressing ingredients in the proportions indicated. Toss over all ingredients. Chill.

Personal Notes:
For a medium size bowl of potatoes start with 5 Tablespoons of each (Miracle Whip, sugar and vinegar). I have found if the vinegar is too old the dressing does not turn out as well. Tasting the dressing before adding it to the potatoes helps - sometimes I decide to add a little more vinegar or mustard. The dressing seems to turn out a little different each time!
