12 lasagna noodles
15 oz. ricotta cheese
2 (8 oz.) shredded mozzarella cheese
1/2 c. Parmesan cheese
1/4 c. chopped parsley
1/2 tsp. salt
2 eggs
1 large meatless spaghetti sauce

Directions:
Directions:
Cook noodles and let cool. Mix the ricotta cheese, 1 (8 oz.) mozzarella cheese and Parmesan cheese. Add parsley, salt and eggs. Cut lasagna noodles in half. Spread cheese mixture on each noodle, roll jelly-roll fashion. Spread 1/2 jar of spaghetti sauce in 10x15 baking pan. Place rolls in pan. Top with remaining sauce and the other mozzarella cheese. Bake covered at 350° for 50 mins.
