1 large (4 qt.) bowl of leaf lettuce (cut up in 1-inch sized pieces)
8 radishes (sliced or diced)
8 green onions(chopped)
5 strips of bacon (cooked crisp and broken in small pieces)
3 t. sugar
3-4 T. vinegar

Combine lettuce, onions, radishes and bacon bits in bowl. Heat bacon grease, vinegar and sugar until hot. Pour over the ingredients in bowl and toss. Serve immediately.

I suppose I never do this the same way twice! I usually drain the bacon on a paper towel and put it on right at the last. Sometimes I feel that I do not have enough bacon grease, so I add vegetable oil to it. Sometimes I pour all the grease out and JUST use vegetable oil. I cook my bacon in a tall 4 or 6 qt. pan. (I am lazy and I hate to clean up grease splatters!) I also put a lid on the pan while the grease, vinegar and sugar are heating so the liquid does not evaporate. I like for my lettuce and vegetables to be room temperature. I dump the hot liquid on the bowl of lettuce, and stir quickly and dump it back in the big pan while the pan is still hot, stir quickly, then dump it all back in the bowl. This recipe came from my mother-in-law and she got it from her mother-in-law and she had a big family and made it in a dishpan! Seems like the old-timers used to put some milk in it. Seemed weird to me, and by the time I got the recipe they stopped adding milk.
