1 large onion
3/4 c. chopped celery
1/4 c. butter
5 c. cubed peeled potatoes
3 c. water
3 c. milk, divided
4 tsp. chicken bouillon granules
1/2 tsp. salt
1 tsp. pepper
1/4 c. flour
4 c. shredded cheddar cheese (16 oz.)
1 lb. cooked bacon, crumbled

Directions:
Directions:
In a soup kettle, saute onion and celery in butter for 5 mins. Add potatoes and water, bring to a boil. Reduce heat, cover and simmer 15 mins. (until potatoes are tender). Stir in 2 c. milk, bouillon, salt and pepper. Combine flour and remaining milk (1 c.) Bring to a boil, stir 2 mins. until thickened. Reduce heat, add cheese and bacon.
