3 T. unsalted butter
1 small onion, finely chopped
1 1/2 c. long grain rice
1 3/4 c. chicken broth
3 strips orange zest
1/2 c. orange juice
1 bay leaf
1/2 c. dried cranberries, chopped
6 green onions, finely chopped
salt and pepper

Directions:
Directions:
1. Melt butter in skillet, add onion and 1/2 tsp. salt. Cook ~3 mins. Add rice, cook 3 mins. more.

2. Stir in broth, zest, juice and bay leaf. Bring to boil over med. heat. Cover. Reduce heat to low. Simmer ~20 mins.

3. Quickly sprinkle cranberries and green onions over rice, do not stir. Replace lid. Remove from heat, let stand 10 mins.

4. Discard bay leaf and zest, fluff with fork, salt and pepper to taste.
