6 extra large baking potatoes
1 stick butter
1 cup whip cream or half-and-half
1 can (14.5 oz.) pink salmon, drained
1-1/2 cup sharp cheddar cheese, shredded
3 tbsp. chives, minced
2 tbsp. green pepper, finely chopped
2 eggs, well beaten
1/2 tsp. salt
Dash pepper, paprika

Directions:
Directions:
Bake potatoes at 375º approximately 1 hour until tender; cool. Take thin slice off top of each potato. Scoop out pulp leaving thin skin.

In a bowl mash pulp; add butter, milk, 3/4 cup cheese, chives, salt, peppers. When mashed together, mix in salmon. Spoon into shells.
Place on ungreased cookie sheet.

Bake at 375º for 30 minutes. Add remaining cheese until melted. Sprinkle with paprika.
