5 lbs. medium yellow squash, thickly sliced
2 eggs, beaten
1 c. whole-wheat bread crumbs
1/2 c. butter or margarine
1/4 c. sugar
2 T. chopped onion
1/2 tsp. salt
1/4 tsp. pepper

Directions:
Directions:
Cook squash in a large saucepan with enough water to cover. Cook until tender. Drain well and mash. Drain again. Combine squash with remaining ingredients. Turn into a 3-quart casserole that has been lightly greased. Top with additional bread crumbs. Bake at 350 degrees about 20 minutes or until lightly browned. Note: Herb seasoned dressing mix in a package may be used for bread crumbs.
