Grandma Gilligan's Irish Brown Bread Recipe

Ingredients: 10 oz. wholemeal flour 6 oz. plain flour 1/2 tsp. salt 1/2 tsp. bread soda 1/2 pint sour milk (approx) buttermilk may be used 1-2 tsp. brown sugar may be added if you like a little sweetness in your bread

Directions:Preheat oven 400º, gas mark 6. Mix the two flours, salt and bread soda together (and sugar if you use). Make a well in the center and pour in almost all the sour milk, stirring with a wooden spoon to form a loose dough. Knead very quickly on a floured board to form a circle (about 8" in diameter). Place on a floured baking sheet. Alternatively you can cook bread in a 7 1/2 x 4 x 2 1/2 well greased loaf tin. Sprinkle surface with a little wholemeal flour to give a nutty surface. Bake in preheated oven for 30 minutes. Reduce temperature to 300º and bake for 30 minutes more until the bread is well risen, brown and crusty on top (when a skewer inserted into the center comes out clean). Remove from the oven, turn out and wrap in a clean cloth. Leave on a wire rack to cool. |

Notes: The secret of good Irish bread is to mix quickly and lightly and not to overwork. The texture of this bread can be varied depending on the coarseness of the wholemeal flour used.
Serve with good Irish butter and homemade jam!!!
