Boil 4 large sweet potatoes until a fork goes in easily.

Mix together the following:
Flour 2-3 cups
Baking powder 4 teaspoons
Salt ½ teaspoon

Peel warm sweet potatoes and put into a separate bowl and mix the following into the warm sweet potatoes:

Crisco 3 tablespoons
Sugar 2 ½ cups


Knead in the flour/baking powder/salt mixture into the sweet potato mixture.

Add flour as needed to lessen the moisture.

Flour board and scoop out some of the dough on to the board, add flour to the top of the mound of dough on the board and rollout until the dough is about 1/3 of an inch high.

Use a round cookie cutter to make biscuits. Keep adding flour as needed during this process.


Place parchment paper on a cookie sheet. Place cut out biscuits on parchment paper. (Use parchment paper to cook the biscuits, this will cut down on the burning of the bottom of the biscuits.

Bake in oven at 450o for 10 – 12 minutes

Makes about 20 1 ¾ inch biscuits
