1 lb. ground beef
1 jar (16 oz.) thick and chunky salsa, divided
1/4 cup water
1 envelope taco seasoning
1 head lettuce, torn
2 cups broccoli florets
1/2 cup red onion, sliced
1 large carrot, shredded
1 large tomato, diced
1/2 cup cilantro, chopped
3/4 cup cheddar or Mexican cheese, shredded
1 cup sour cream

Directions:
Directions:
In skillet over medium heat, cook meat until lightly browned; drain. Add 1 cup salsa, water, taco seasoning. Bring to boil; reduce heat; simmer 20 minutes; cool.

In salad bowl, layer vegetables in order listed. Top with beef mixture and cheese. Top with sour cream and remaining salsa. Serve with tortilla chips.
