2/3 c. shortening
2/3 c. sugar
2 eggs
1 tsp. vanilla
1 tsp. grated lemon peel
2 c. flour
1 ½ tsp. baking powder
½ tsp. salt
1 c. pineapple filling

Directions:
Directions:
Mix all but pineapple and chill. Roll on lightly floured board 1/8” thick. Cut with 2 ½” cutter. Place ½ of circles on cookie sheet. Spread 1 tsp. filling almost to edges. Cut slits in remaining circles and place over filling. Seal edges with fork. Bake at 400° 8-10 minutes. Makes 30 cookies. Filling: Cook ¼ c. sugar, 1 TB cornstarch and crushed pineapple until thick. Cool.
