½ c. water
2 lbs small new potatoes, scrubbed, trimmed, and quartered
2 tsp. minced garlic
½ tsp. coarse salt
½ tsp. crushed red pepper flakes
1 TB fresh thyme or 1 tsp. dried
2 TB olive oil
2 TB Italian parsley

Directions:
Directions:
Steam potatoes until barely tender (about 4 minutes). Allow to cool to room temperature, then place between layers of paper towel and blot dry.
Place oven rack in top of oven and preheat to 425°.
In shallow 2-quart baking pan, combine garlic, salt, pepper, thyme and olive oil. Place potatoes in pan and toss to coat. Bake in oven 20 minutes, turning once or twice, until golden and tender. Remove and transfer to a platter. Garnish with parsley if desired.
